Ingredients

- 1 15-ounce can chopped tomatoes
- 2 chipotle chilis in adobo sauce or 2 tablespoons pureed
chipotle in adobo (from 1 can)
- 4 teaspoons chili powder
- 2 garlic cloves (smashed)
- 1 teaspoon Diamond Crystal kosher salt
- Fresh black pepper (to taste)

- ½ teaspoon extra-virgin olive oil
- ½ large onion (sliced; yellow and red varieties work well)
- Pinch of kosher salt
- 1 ½ cups leftover vegetable sides (roasted butternut
squash, Brussels sprouts, or a bunch of hardy greens like spinach or kale)
- 4 cups (15 ounces) shredded leftover turkey breast or
chicken breast
- 4 6-inch corn tortillas, cut into bite-size strips
- 3 ounces shredded cheese (Mexican cheese blend, Monterey
Jack, or mozzarella)

- Sour cream
- Sliced fresh jalapeno
- Chopped fresh cilantro
Instructions
- 1. Preheat and Prepare: Position a rack about six inches below the broiler and set it to high.
- 2. Sauce Creation: In a blender, combine pumpkin, tomatoes, chicken broth, chipotles, chili powder, garlic, salt, and pepper. Blend until the mixture achieves a smooth consistency.
- 3. Skillet Magic: In a large ovenproof skillet over medium heat, shimmer the olive oil. Add sliced onions and a pinch of salt; sauté until translucent (about 3 to 5 minutes).
- 4. Vegetable Fusion: Introduce roasted veggies or chopped greens, stirring often until heated through or wilted (for greens, approximately 2 to 3 minutes).
- 5. Enchilada Fusion: Add turkey, chopped tortillas, and the entire enchilada sauce. Stir generously to ensure every ingredient is coated in the flavorful sauce.
- 6. Simmer and Melt: Bring the concoction to a simmer and cook for 5 minutes, stirring occasionally. Remove from heat and evenly sprinkle cheese on top.
- 7. Broil Brilliance: Transfer the skillet close to the broiler and broil until the cheese melts and develops golden spots (1 to 2 minutes). Allow it to cool for 5 minutes.
- 8. Garnish Extravaganza: Top your creation with sour cream, sliced fresh jalapeno, and a sprinkle of fresh cilantro.
